I worked out this morning, and when I got home I was starving. I was about to eat my typical breakfast of instant oatmeal or a soy hot dog (gross sounding, I know, but actually really good!) and coffee but then I decided to try something a little more creative.
I pulled together whatever random ingredients we happened to have, and proceeded to make baked eggs in a little ramekin. I chopped up a tomato and mixed it with spinach and some pesto, cracked the egg on top and shredded a little bit of cheese on top of that.
I added a bit of sea salt to the top, popped it in the oven for 15 minutes, and voila - a super easy, super healthy breakfast:
